What is Late Knight Coffee? What exactly is it that you do?
Late Knight Coffee is a small business and LLC run out of our home. We roast, package, and sell high quality coffee! We take raw green coffee beans and turn them into a ready-to-brew product.

So…you’re not just repackaging and selling coffee?
No, that would certainly be easier though.
I bet your house smells good all the time!
Yes, it does. While coffee roasting produces a fairly enjoyable smokey aroma, the really good smells come on days that we are grinding and packaging the coffee.
Are you opening a coffee shop?
Not at this time, but we do serve a lot of happy customers in our dining room.
What makes your coffee different than what I buy at the grocery store?
First off, freshness! Coffee is available within days of roasting while big brand grocery store coffee is weeks or even up to a year old! Ever notice there aren’t roast dates on those bags? Fresh means better flavor because the beans haven’t gone stale and the oils rancid.
Second, our coffee is sourced from small farms where coffee cherries are picked and processed at peak ripeness by people. Big brands typically use mechanized picking which grabs all cherries—whether over or under ripe, pest-infected, or diseased.
Third, small batches allow us to have a more controlled roast! We’re able to better monitor and control times and temps as we watch and listen closely to the beans. We typically roast about a pound at a time!
Where do you source your green beans?
We buy primarily from a single distributor in the United States, which offers coffee from all over the world, mostly from smaller farms. We test coffees repeatedly and research thoroughly before adding them to our lineup.
Is your coffee flavored?
Typically, no. These refer to the naturally occurring notes (flavors). Because we buy high-quality green beans grown all over the world, this results in many subtle differences in how the coffee tastes. The roast level also has a significant effect! So far, our only flavored coffee is our holiday blend The Merrymaker. It has added natural spices, one being cinnamon.
Do you have organic coffee?
Some of our coffees, such as Hopeful Hero, are certified organic, and are labeled on the front as such.
Why is my coffee out of stock? When will it be back?
First of all, sorry—we know it’s a big bummer when a coffee you love is not available! Because we purchase all of our beans during the current crop year, sometimes those beans run out of stock from our supplier, and we all have to wait for the next coffee season in that region.
